Recipe - Meringue

A recipe I always get comments on is Meringue. I steared away from making it for a long time, but found it to be really simple and extremely yummy!

Ingredients:

3 egg whites
1 cup or 8oz of sugar

Tip - use either a glass or metal bowl to whisk as it's important the bowl is grease free. You can always wipe with some vinegar to make sure.

Method:
*Preheat oven to 300F/150C/Gas Mark 2
*Put egg whites in bowl and whisk with an electric beater at high speed until form soft peaks.
*Add sugar 1 tablespoon at a time, beating in well
*Keep adding until all sugar is used and egg whites have stiffened somewhat.
*Cover baking tray with parchment/wax paper
*Spead meringue into desired shapes - nests, bites, larger circle(for pavlova)
*Cook for 30 mins. When time is up, leave meringues in oven until completely cool.

Tip - if stored in an airtight container, they will last for a couple of weeks
