Chocolate Fridge Cake

Another family favourite. However, this receipe does contain raw egg and so some of you may choose not to make it.

4 ozs (1/2 cup) of margarine
1 egg, beaten
3 tablespoons sugar
1/4 teaspoon vanilla essence
1 cup raisins
1/2 lb (1 cup) crushed digestive biscuits (Graham crackers, I think)
1 tablespoons cocoa
4 ozs melted choc for topping

1. Melt marg and sugar gently in largish saucepan
2. Remove from heat and add beaten egg, essence and cocoa and mix well
3. Add raisins and crushed biscuits
4. Put a large piece of greaseproof paper over 7 inch sandwich tin and empty mixture onto top of greaseproof paper. Press down with metal spoon.
5. Put in fridge for 2 hours
6. Pour over melted choc and return to fridge to set.

Not one to make if you are on a diet! One I take to friends to cheer them up, much to the chagrin of my family as they see it disappearing from the house!

I can vouch for it being a family favourite. It's very rich and very bad, but oh so good!
