Cinnamon-Raisin Breakfast Buiscuits

8 oz firm silken tofu
1/4 c apple juice
1 c wholewheat flour
1 c all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 ts salt, optional
1/2 c chopped walnuts (I don't usually put them in)
1/2 c raisins
1/4 c maple syrup, optional

Preheat oven to 450F. Oil baking sheets.
Blend tofu until smooth. Blend in apple juice & 3 Tbs maple syrup. Transfer to a mixing bowl and set aside.
Sift together the next 6 ingredients and fold them into the tofu mixture. Gently stir in the walnuts and raisins. Turn dough onto a lightly floured surface and form into a ball. roll out dough to a 1/2 in thikcness. Cut with a cookie cutter ( I usually use the rim of a small glass). Using a pastry brush, glaze with the remaining syrup if you wish. Bake for 12 minutes.
Enjoy, they are delicious and if you have leftovers they freeze well.

I usually buy it Trader Joe's on my weekly shopping run. But I am pretty sure you can also get it at Giant, Super Fresh and other regular grocery stores.
