This week... Chicken

Chicken Balti

1 lb chicken, cubed
8 tomatoes, sliced
2 garlic cloves, crushed
1 tbsp curry powder
1 tsp chili powder
1 tsp salt
1 tsp ground cumin
5-floz water
4 tbsp vegetable oil
1 tbsp fresh cilantro

Heat oil in wok
Add tomatoes, cook for 5 minutes, stirring
Add chili powder, cumin, salt and garlic. Cook 2 –3 minutes
Raise heat and add chicken. Stir-fry for 5 minutes.
Pour in the water, bring to the boil, then simmer for 20-30 minutes, until sauce is thickened and chicken cooked through.
Serve with fresh cilantro to garnish

Perfect side is Naan bread,(from Indian food shops) or can be served with rice.

This is a variation of a curry that is massive in England. We look forward to home in the summer, and eating aat a Balti place - very cheap and very yummy.

Becky, thsi sounds really yummy!! I will try it but probably take it easy on the curry since Luca is not a fan of curry and I don't want to have to cook something different for him.
